Egg-Free S’mores Sunbutter Cookies

Dry Ingredients

  • 1 ⅓ cup tigernut flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/8 teaspoon salt

Wet Ingredients

  • 3 Tbs water

  • 1 Tbs ground flax

  • ½ cup sunbutter

  • ⅓ cup apple sauce

  • ⅓ cup honey

  • 1 teaspoon vanilla

  • ⅓ cup non-dairy chocolate chips

  • ⅓ cup mini marshmallows

Instructions

  1. Preheat the oven to 350F and line two cookie sheets.

  2. Mix together 3 Tbs water + 1 Tbs ground flax to make a “flax egg” and set it aside.

  3. Sift the dry ingredients in a bowl.

  4. Add the wet ingredients and flax egg.

  5. Fold in the chocolate chips and marshmallows.

  6. Place the dough in the refrigerator for 30 minutes to chill.

  7. Scoop the dough onto the pans. Bake for 10-12 minutes, or until cooked through Enjoy!
