Turkey Mozzarella Crustless Quiche
Ingredients
4 Tbs olive oil
½ sweet onion
1 lb ground turkey
1 Tbs garlic & herb seasoning
1 Tbs minced garlic
2 cups broccoli
2 cups kale
10 large eggs
½ cup non-dairy milk
salt and pepper to taste
½ cup dairy-free mozzarella cheese
Instructions
Preheat oven to 400F, and lightly grease a pie pan.
Peel and dice the onion. Add 1 Tbs of olive oil to a pan over medium heat. Add the onion, and sauté until golden. Add the ground turkey and seasoning and cook for 7-10 minutes. Place aside.
Add 1 Tbs of olive oil to a pan over medium heat. Add the garlic and sauté until golden. Add the broccoli and kale and sauté until tender. Place aside.
Crack the eggs into a bowl. Add the non-dairy milk, salt, and pepper. Whisk until well combined.
Transfer the turkey, vegetable, and egg mixtures into an 8×8 pan. Top with dairy-free cheese. Bake for 45 – 50 minutes or until cooked through. Serve warm.
Store in an airtight container in the refrigerator for up to a week. or properly wrapped in freezer paper in the freezer for a month.
