Turkey Mozzarella Crustless Quiche

Ingredients

  • 4 Tbs olive oil

  • ½ sweet onion

  • 1 lb ground turkey

  • 1 Tbs garlic & herb seasoning

  • 1 Tbs minced garlic

  • 2 cups broccoli

  • 2 cups kale

  • 10 large eggs

  • ½ cup non-dairy milk

  • salt and pepper to taste

  • ½ cup dairy-free mozzarella cheese

Instructions

  1. Preheat oven to 400F, and lightly grease a pie pan.

  2. Peel and dice the onion. Add 1 Tbs of olive oil to a pan over medium heat. Add the onion, and sauté until golden. Add the ground turkey and seasoning and cook for 7-10 minutes. Place aside.

  3. Add 1 Tbs of olive oil to a pan over medium heat. Add the garlic and sauté until golden. Add the broccoli and kale and sauté until tender. Place aside.

  4. Crack the eggs into a bowl. Add the non-dairy milk, salt, and pepper. Whisk until well combined.

  5. Transfer the turkey, vegetable, and egg mixtures into an 8×8 pan. Top with dairy-free cheese. Bake for 45 – 50 minutes or until cooked through. Serve warm.

  6. Store in an airtight container in the refrigerator for up to a week. or properly wrapped in freezer paper in the freezer for a month.
