Grain-Free Gingerbread Granola

Ingredients

  • 1 cup cashews

  • 1 cup pecans

  • ½ cup shelled pumpkin seeds

  • ⅓ cup honey

  • ⅓ cup ground flax

  • ¼ cup coconut oil

  • 1 tsp vanilla extract

  • 1 tsp gingerbread spice

  • ¼ tsp salt

  • ¼ cup candied ginger

  • ¼ cup dried cranberries

Instructions

  1. Preheat the oven to 400F and line a baking sheet.

  2. Add all of the ingredients (except candied ginger and dried cranberries) to a bowl and mix.

  3. Pour the mixture onto a pan and bake for 15-20 minutes. The nuts should be fragrant and lightly toasted brown.

  4. Remove it from the oven and add the dried cranberries and candied ginger.

  5. Press the granola down and together, and let it completely cool.

  6. Break the granola into pieces and enjoy!
