Gluten-free Funfetti Cookies that are perfect for celebrating any occasion!

What better way to celebrate my twenty-second birthday than with gluten-free cookies? They have soft, chewy centers and crisp golden-brown edges filled with lots and lots (and a few more) dye-free, natural sprinkles.


What is Your Favorite Dairy-Free Butter?

Wheat and dairy-free baking is such a science, especially the dairy part. I have tried so many dairy-free butter brands that are so delicious in savory dishes. However, when it comes to binding bake goods for a rich texture, Earth Balance butter is the way to go. I prefer to bake with their baking sticks because it is easy to measure, but their butter tubs work just as well.

Do I Have to Chill the Dough?

Chilling the cookie dough helps prevent the cookies from spreading too much, creating the best soft, thick, and chewy cookie. So yes, chilling the dough is essential. Wash the baking bowls and clean up the kitchen, and it will be just about time to scoop the dough and bake it. Trust me, 30 minutes of chilling time is so worth it.

Teal Cookie Monster Cookies

Ingredients

  • 1/2 cup dairy-free butter

  • 1/2 cup table sugar

  • 1/3 cup brown sugar

  • 1 tsp vanilla extract

  • 1 large egg

  • 1 egg yolk

  • 1 1/2 cups gluten-free all-purpose flour

  • 1/2 tsp baking soda

  • 1/3 cup natural sprinkles

Directions

  • With an electric mixer, cream the dairy-free butter, table sugar, and brown sugar. 

  • Then, whisk in the vanilla extract, one whole egg, and one egg yolk 

  • Next, add the gluten-free all-purpose flour and baking soda. Then, fold in the natural sprinkles.

  • Chill the dough for at least 30 minutes.

  • Preheat the oven to 350F and line a baking sheet. 

  • Roll the dough into balls and place them on a baking sheet. Bake for 8-10 minutes or until the others are golden brown.

  • Serve with a glass of dairy-free milk and enjoy! Store the cookies in an airtight container for up to a week.
