Citrus Carrot Salad

Salad Ingredients:

  • 1 bunch of carrots

  • 3/4 cup sprouted lentils

  • 1 can of chickpeas

Dressing Ingredients:

  • 1/3 cup olive oil

  • 1/3 cup apple cider vinegar

  • 1 orange

  • salt and pepper to taste

Instructions:

  1. Start by soaking the carrots in vinegary water, especially if you buy them from the farmer’s market.

  2. Cut the carrot tops off, and save to use another recipe like this carrot top pesto.

  3. Next, peel and shred the carrots and place them in a large bowl.

  4. Cook sprouted lentils. Simply boil water, and cook the lentils for about 3-5 minutes. Drain, and place aside.

  5. Juice and zest the orange. Mix them with the other dressing ingredients and place aside.

  6. Add canned chickpeas and cooked lentils to the carrots. Pour the dressing on top and mix until well combined. Serve as is or with your favorite protein (I like adding grilled chicken), and enjoy!
