Baked Pumpkin Fries

Ingredients

  • 1 pie pumpkin

  • 2 Tbs olive oil

  • 1 Tbs maple syrup

  • 2 tsp pumpkin pie spice

  • 1 tsp cayenne powder

  • Salt and pepper to taste

Candied Pumpkin Seeds

  • 1/4 cup pumpkin seeds

  • 1 piece candied ginger chopped

  • 1 Tbs olive oil

  • 1 Tbs maple syrup

  • 1 Tbs fresh sage

  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 425F and line a baking sheet.

  2. Wash and dry the pie pumpkin. Cut it in half and scoop out the seeds. Save the seeds for another recipe. Cut the pumpkin into fries and place them in a bowl.

  3. Add the olive oil, maple syrup, pumpkin pie spice, cayenne, salt, and pepper and combine until the pumpkin is evenly coated.

  4. Place the pumpkin on the lined baking sheet and bake for 30 minutes, flipping halfway through.

  5. In a bowl, combine the candied pumpkin seed ingredients.

  6. Remove the pumpkin from the oven and pour the candied pumpkin seeds over the pumpkin fries. Broil the pumpkin for 5 minutes or until the candied pumpkin seeds are toasted. Watch it carefully, so it doesn't burn.
